I adore vegan food and I have decided to turn my attention to more vegan food with a view to converting over the course of the next few weeks, I take my hat off to anyone who can just over-turn their life like that, but for me, the process has to be a little slower. In honour of this new changing philosophy, I have created these fantastic chocolate and strawberry dessert bars, with a beautiful nut and date base, an amazing and super easy strawberry jam with a lush vegan chocolate top. These little fellows can be made ahead and kept in the freezer until you’re ready to consume one, just take it out an hour before to thaw and you can enjoy until your heart’s content. Are you vegan? This is the recipe for my vegan and barely any sugar strawberry jam…
200g of any nuts you would like (you may need more depending on the size of your container.
14-20 dates (this again will depend on the size of your container – if you need to add more nuts add another date)
Pre-made chia seed jam – link to the recipe is above
200g dark vegan chocolate
Pour all of your nuts and dates into a food processor and blitz – this should bind but still be chunky – if it isn’t binding then add another date.
Once blitz add the mixture to your tart tin, or whatever tin you have to hand. Pat into the edges and pat the mixture until the surface is flat.
Now add this to the freezer for an hour.
Once the base has frozen take out and add your chia seed jam, once again patting down, ensuring it is spread to the edges. (The chia seed jam should be cold).
Now add to the freezer for an hour.
Just before taking out your frozen dessert melt your vegan chocolate – you can melt using either a microwave or the bowl and pan method if you choose the microwave ensure you keep an eye on it and check it every 10-15 seconds as it can burn quickly.
Pour the melted chocolate over the top and spread quickly as it will hard pretty much straight away – I poured mine in small batches so I could work quickly to cover the top.
Now add back to the freezer.
Once it has been there for 30 mins to an hour take out, cut up and re-freeze, take them out an hour before you want to eat one to thaw out.
