
This is my recipe for a healthy breakfast bake. You can make it the night before and enjoy it all week for breakfast, it’s quick, easy and nutritionally dense. I love to serve mine with some Greek yoghurt and some beautiful local honey. It’s a different take on a fruit compote and wonderfully comforting on a cold winter’s day, just match it with a beautiful cup of tea. If you want to make this for a healthy dessert you can do, you can serve it with some yummy ice-cream and your favourite movie. This great dish is low in sugar and packs a flavour punch! You will be glad you have made this one.

Ingredients
Frozen berries – The volume and type of berries depends on a) the size of your dish and b) the type of berries you like – I used: 600g mixed berries
1 tbsp of hot water
1 tbsp of honey
1 tbsp of lemon juice
100g rolled oats – though you can add more if you want more oats, or your dish is bigger than mine
Method
Add frozen fruit to an oven-proof dish In a cup add the hot water, lemon and honey – stir until the honey has dissolved
Add the water, honey and lemon mixture over the frozen fruit
Top frozen fruit with oats – ensure you spread them over the top as evenly as you can
Pop in the oven and bake for 30-45 minutes or until your oats are nice and golden and your fruit is nice and bubbly
Take out, add some Greek yoghurt and honey to serve and enjoy
